Salisbury Steak w/Onion Gravy

A photo doesn’t do this meat patty justice.  It’s intense in flavor and incredibly juicy.  The onion gravy is to Salisbury steak as whipped cream is to ice cream.   Just essential!   Goes lovely with a side of Creamed Spinach...

Red-Wine Pot Roast w/Porcini

Old-school style roast beast, I mean beef.  Not the tenderest of the beef cuts, but… constant basting will help keep the meat from drying out.  Another alternative is to braise the beef in a slow-cooker for 2 hours per pound.  Scoop a...

BBQ Patty Melt Burger

The recipe calls for cooking the burgers on a griddle or frying pan, but I also recommend grilling.  The griddle/pan method keeps the burgers juicy, although warmer weather stirs the grill master in us all.  These burgers are simply...

Giddy-Up Burgers

A little twist on your average beef burger.  Grilled onion intensifies it’s flavor.  No cheese necessary.   Serve with coleslaw, chips and garlic pickles.

Pasta w/Stuffed Meatballs

Bite into one of these meatballs and you will be pleasantly surprised with the texture of warm cheese.  What better to stuff a meatball with?

Swedish Meatballs

I think I found THE Swedish Meatball.

Horseradish Cream

A wonderful accompaniment to corned beef or roast beef.

Shreddin’ Shredded Beef

This recipe goes a long way.  It's easy to prep, use in various ways and freezes well too.  Makes about 6 cups, so freeze in separate 2-cup portion sized containers (up to 3 months).  Thaw out over the course of a day before using.  I am particularly fond of the South Street Sangwiches!
