Rosemary Grapefruit Bellini
For the Bellini:
First make the simple syrup: Add the sugar, 1/2 cup water and the rosemary to a saucepan. Bring to a boil, stirring until the sugar dissolves. Remove from heat and cool.
To make the champagne cocktail: Combine a tablespoon of the simple syrup, gin and grapefruit juice. Stir. Pour and top each glass with champagne. Use rosemary and grapefruit slices to garnish.
