Pink Champagne Cupcakes

Size: a cake mix box worth...

Ingredients:
CUPCAKES:
1 box white cake mix
A few drops of red food coloring
Champagne (to use in place of water for cake mix)
FROSTING:
8 oz. shortening
1 lb. powdered sugar
1 tsp vanilla
2-3 tbsp milk
Candy pearl sprinkles (or sprinkles of your choosing)

Directions:

Cook cake according to package instructions, replacing champagne for the water and adding a few drops of red food coloring to make cupcakes pink.

Let cupcakes cool and make frosting by adding shortening and powdered sugar to stand mixer (if want pink frosting, add a few drops of red food coloring). Mix on high with whisk attachment until blended. Add vanilla and milk and mix on high until light and fluffy.

Frost cupcakes and sprinkle candy pearls (sprinkles) on top.
