Ice Cream Sandwiches

A great easy dessert that everyone will love.

Size: make however many you want!!

Ingredients:
Cookies... any sort of cookie works with these (French butter cookies work fantastically!)
Ice cream, sorbet, gelato, frozen yogurt (I used lemon sorbet, dulce de leche ice cream & banana split ice cream)
Rainbow and chocolate sprinkles

Directions:

Let ice cream soften at room temperature for 15 minutes, then place a small scoop on the flat side of a cookie.  Top with another and press gently.  If desired, roll the sandwich through rainbow or chocolate sprinkles to coat the ice cream.  Freeze on a baking sheet for at least an hour to harden; wrap each sandwich in plastic.  They will keep, frozen, for about a week.
