Guiltless Muffins!
Cauliflower rice is probably the best staple you can have in your kitchen these days. It is just so versatile and is so darn good for you! I made these muffins last night and they were absolutely delicious. I was planning on making a pasta dish but wasn’t in the mood for heavy carbs. So, I looked around my pretty bare fridge and decided to give this a whirl. You can make these muffins with nearly any other vegetable you have and even add ham or bacon – this is what I did:
- Preheat oven to 400
- Saute diced onion, garlic, mushrooms and cauliflower rice in a pan with olive oil- just long enough so that everything was tender.
- Add french cut string beans
- Whisk four eggs and a splash of milk in a large bowl.
- Spray my muffin pan with non-stick spray
- Fill the tins nearly to the top and then sprinkled with cheddar cheese
- Bake for 25-30 minutes until I saw the edges of the muffins getting crispy
- Cool for ten minutes and served
They were absolutely delicious! I served them with a side salad, and they were the perfect Friday night meal. The following morning, I heated them in the oven and they were just as good the next day! Try out your own version and let us know – RVC@tipsfromtown.com
