Bacony Roasted Chickpeas
Nuts are a wonderful source of protein and antioxidants, but why not switch it up with the equally enriched chickpea? When roasted, they provide even more crunch than a nutty snack. Add bacon and Old Bay seasoning? Well, now we are talking serious satisfaction.
Ingredients:
Two 15 oz cans chickpeas/garbanzo beans (or jarred)
3 coarsely chopped bacon slices
2 bay leaves
Kosher salt and freshly ground pepper
Spoonful of Old Bay seasoning (to your liking)
Preheat oven to 375F.
Rinse and pat chickpeas very dry. Toss with chopped bacon and bay leaves on a rimmed baking sheet; season with salt and pepper.
Roast chickpea combo, stirring occasionally, until chickpeas are crunchy, 60-70 minutes.
Toss with Old Bay and serve. Good both warm or room temp. (I found they last fine for up to a week when stored properly in airtight container or bag)
