Avocado-Chicken Salad

Simple, fresh and delicious. Recipe was passed to my mother from a friend and now I am passing it along to you.

Size: serves 4

Ingredients:
2 chicken breasts, cooked and diced (or shredded)
2 ripened avocado, chopped
Juice from 1 fresh lime (add more if desired... I do)
1 packed tbsp finely chopped cilantro (add more if you love cilantro)
Minced onion... I add very little, but feel free to add as much as you want
Salt and pepper to taste

Directions:

Mix all ingredients together.

Serve atop lettuce, in a sandwich, on toast points…
