Gluten-Free Banana Bread

This is soooo good!! It is healthy and packed with protein. Definitely worth a try as long as no one in your house is allergic to almonds.

Size: 1 large loaf or a few mini loaves

Ingredients:
1/2 cup coconut oil-measure as a solid and then melt before mixing
2/3 cup organic 100% maple syrup
2 eggs
1 1/2 cups ripened banana-I used 4 medium bananas
2 cups almond flour
1/4 cup coconut flour
1 tsp himalayan ground sea salt or plain sea salt
1/2 tsp cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/3 cup organic shredded coconut

Directions:

Melt coconut oil and mix with syrup, then add eggs and bananas. Mix in mixer and add dry ingredients. I sprayed my loaf pan with coconut oil spray. Bake at 350 degrees. If you using small loaf pans check after 30 minutes. I don’t recommend using a large loaf pan because I did that and it completely fell apart when I took it out of the pan. If you do use a large pan, bake it for 50-60 minutes.
