Quick and Easy Summer Meal

Now that summer has officially arrived, so has the idea spending less time in the kitchen and more time outdoors. In my family we tend to eat lighter in the warmer months and we try to use the BBQ as often as possible and the oven less often. My kids are big fans of homemade pizza and with the many options of pre cooked crusts at the supermarket, this is nearly fail proof. One of my sons loves Portabello mushrooms where the other prefers them out of the can. I brushed the pizza crust (my favorite is the Boboli brand) with a teaspoon of extra virgin olive oil, and then I put a thin layer of sauce with diced garlic. I topped one half with mozzarella and mushrooms and the other side with fresh basil, mozzarella and Portabelo mushrooms. Baked on the grill with a low flame, this pizza wowed them!- Served with a side garden salad, it was a perfect break from a heavy meal. This can also be made with a gluten-free crust and goat or feta cheese for a healthier twist.
