PB Cheesecake Pretzel Bites

Beware of these little sandwiches.  You may find it difficult to not hoard the entire tray for yourself, and devour them in some tucked away little corner of the house.  It’s one of those items that is so simple to assemble that you’ll want to make them weekly.

Size: as many as the cheesecake filling will allow... a bunch!

Ingredients:
Pretzel squares
1 package cream cheese (softened)
8 Nutter Butter cookies
1 tsp creamy peanut butter
1 large bar of good dark chocolate
Sprinkles

Directions:

Grind cookies into fine powder in food processor.  Combine with cream cheese and peanut butter; mix until smooth.  Spoon 1 teaspoon at a time onto pretzels, and place another pretzel on top.  Melt chocolate in microwave, and drizzle on top.  Add sprinkles and chill. (Make these relatively close to when serving as pretzels make get soft with absorption)
