Kale, Quinoa and Mango Lunch
I have been trying new healthy recipes this month from Danette May. This is one of my favorites and it is so easy to make. I have had it for lunch and dinner. My husband liked it as well. If you make a batch of quinoa ahead of time it takes only five minutes to prepare.
Ingredients:
1/2 cup Organic Papaya or Mango
1 cup organic kale
2 tsp. coconut oil
1 cup pre-made quinoa
1/2 cup pure coconut milk or almond milk-I use almond milk
Sauté coconut oil, pre-made quinoa, kale, and almond milk (if used) together in skillet until kale starts to wilt. Top with fresh papaya or mango. Sprinkle black pepper to taste.
Trader Joe’s is a great place to buy all the ingredients. They have pre-chopped organic kale in bags. This is a fabulous lunch.
