Herbal-Infused Champagne Cocktail

I recently went to a party where my friend made this fragrant herbal-infused champagne cocktail and I just loved it! it was so light and refreshing!

INGREDIENTS
for the Rosemary Simple Syrup
1/2 cup granulated sugar
1/2 cup water
3 sprigs fresh rosemary

for the Cocktail
1 ounce rosemary simple syrup
1 1/2 ounces vodka
3 to 4 ounces champagne or prosecco
fresh rosemary sprig, for garnish

INSTRUCTIONS
Make the simple syrup. In a small saucepan, combine sugar, water and rosemary sprigs. Bring to a boil over medium-high heat and simmer until the sugar has dissolved, about 3 minutes. Remove from heat and let cool completely. Discard rosemary sprigs. Store in a glass container for up to 1 month.

Make the cocktail. Add simple syrup and vodka to a champagne flute. Top with champagne. Garnish with a rosemary sprig.

Make a Mocktail Version for Kids: You can also make this with sparkling cider for a non-alcoholic version of this cocktail.
