Easy Meals My Kids Love
There is little that can make me feel less appreciated than slaving over a hot stove only to sit across from kids making that face. You know the one. It is a combination disgust, sour grapes and “are you kidding me with this slop?” It is at these moments I understand why some animals just eat their young. It is probably because they complained about the meal the momma was trying to regurgitate. As much as I want the kids to break out and try new things, sometimes, I just want them to eat and say, “Thanks Mom. Can I have some more?” I have a few dishes that are easy and foolproof.
Grandma’s Chicken (so named because when my mom was alive, she would make it for her grandkids)
Served with: Candied Carrots (I know, I know but read my other post before you judge.)
I always keep mixed frozen vegetables, pasta, parmesan cheese, eggs and bacon in the house in case I forget how to get to the food store. Pasta Primavera and Breakfast for Dinner are two more no-fails in my house.
I realize none of this is super healthy and, because I’m a doctor I should be recommending grilled chicken and lettuce. But, here’s what I learned in 4 years of medical school and 3 years of residency. Life is short. It is o.k. to use real butter once in a while.
