Clean Egg Salad
I love hardboiled eggs and let’s face it, we are going to have a lot of them after this weekend. Here is a healthy egg salad recipe for you to enjoy next week. I love egg salad and this healthy version is great. I would just eat on lettuce or a piece of toasted ezekiel bread.
Ingredients:
10 hardboiled egg whites, diced
1/3 cup red onion, diced
1/2 cup celery, diced
8 tbsp avocado, mashed
1 tbsp Dijon mustard-sugar free
1 tsp paprika
1/2 tsp ground black pepper
Pinch sea salt (optional)
- In a bowl, combine eggs, onions, celery, avocado and mustard. Stir until well mixed. Add paprika, pepper and salt; stir to combine. Leftovers can be stored in refrigerator for 2 to 3 days; don’t freeze.
