Clean Banana Bread
This is a healthy and clean banana bread. I make it in my Vitamixer. It is very easy to make. My kids eat it as well. It is gluten-free.
Ingredients:
3 medium ripe bananas mashed, I do this in the vita mixer
1 tsp vanilla
1/4 cup unsweetened almond butter
2 eggs
1/2 cup coconut flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
2 tablespoons ground flax seed
1/4 tsp sea salt
1/2 cup dark chocolate chips
Line a loaf pan with parchment paper and spray it with coconut oil. Add all ingredients except the chocolate chips and mix in a blender. Stir in the chocolate chips at the end by hand. If you use a regular mixer then you can add the chocolate chips. Pour into the loaf pan and bake at 350 degrees for 30-40 minutes. My oven only needs 30 minutes.
I always double the batch and sprinkle pecans on one loaf and leave the other one plain. If you want to freeze the second loaf you can do that as well. I just took one of these loaves to Dublin with me while I was vacationing there and it was my breakfast each day. I precut it and froze it and put it in my carry on.
