Cauliflower Hash Browns
Now that summer is here I am trying to get creative and eat low carb. Rather than make myself fried hash browns this morning, I went out on a limb and tried to using cauliflower instead. Cauliflower rice has become a staple in our house and even though I have made it as a fried veggie rice, I haven’t yet tried turning it into hash browns.. Granted, the photos aren’t perfect and I’d rather have used parchment paper, foil worked just fine.
Ingredients:
1 bag pre-riced cauliflower
2 eggs
2 tablespoons olive oil
1 cup parmesan cheese
5 cloves of garlic-your preference
1/2 a grated onion
add salt, pepper parsley, basil and pepper to taste
Preheat oven to 400 degrees. Add two eggs to bag of cauliflower. Mix in the rest of the ingredients. Turn 2 cookie sheets upside down and line them with a sheet of lightly-greased tin foil. Put in preheated oven for 400 degrees and cook for 25 minutes. Now, as said prior, they may not look perfect, but – boy did they taste delicious!
