Almond Flour Waffles-Gluten Free

I eat mostly gluten free and no processed sugar. These waffles are the best! I made them for my daughter and she loves them too. I did mine in a Belgian waffle maker, pancakes and a dutch pancake maker. Make sure your waffle iron is really hot. When the light comes on wait another four minutes letting it heat up. My first two fell apart inside waffle iron. You need to spray it in between each waffle. I thought the dutch pancake maker worked better. This recipe makes a lot.

Size: 14 servings

Ingredients:
1 large egg
1/4 cup ground flaxseed or extra 2 eggs
1 cup applesauce, unsweetened
1 1/4 cups almond milk
1/2 cup maple syrup or raw honey
1 tsp vanilla extract
1 tsp baking soda
1/2 tsp salt
2 cups oat flour- I used gluten free
2 cups almond meal
cooking spray

Directions:
  1. In a large mixing bowl, lightly beat egg (s). Add flax seed (if using), applesauce, milk, maple syrup, vanilla, baking soda and salt; whisk until well combined. Add oat flour and almond meal, mix well.
  2. Preheat waffle maker. Spray top and bottom griddles with cooking spray each time and make waffles according to your waffle maker’s instructions. Amount of batter depends on the size of your waffle maker. I only used about 1/3 of a cup in my Belgian waffle maker. They expand a lot.
