Colorful Roasted Rainbow Carrots

Here’s a super easy way to add some color to your plate.

Ingredients:
1 Tablespoon Olive Oil
1/2 tsp Kosher Salt
Rainbow baby carrots

Directions:

Set oven to 450 degrees.

Place carrots on a baking sheet. Drizzle with olive oil and sprinkle with kosher salt.

Roast carrots at 450 degrees for about 15 minutes or until tender and slightly brown. Half way through, turning carrots so they don’t get too brown on one side. slightly browned.

Add salt to taste and serve. You can add a little parsley or chives for color.
